Dehydrated cabbage is simply cabbage that has been dried out through a dehydration process, which removes the water content from the vegetable. The dehydrated cabbage can be stored for an extended period of time, as it doesn't spoil as quickly as fresh cabbage.
To dehydrate cabbage, you can either use a dehydrator or an oven set at a low temperature. First, remove the outer leaves and core of the cabbage, then slice the cabbage into thin strips. Next, spread the cabbage strips out in a single layer on the dehydrator trays or baking sheets. If using an oven, keep the temperature between 120-150 degrees Fahrenheit (50-65 degrees Celsius) and leave the door slightly open to allow moisture to escape.
The drying time will depend on the size of the cabbage pieces and the humidity of your environment, but it typically takes around 8-12 hours in a dehydrator and 12-24 hours in an oven. Once the cabbage is completely dry and brittle, store it in an airtight container in a cool, dry place. Dehydrated cabbage can be rehydrated by soaking it in water or broth before use in soups, stews, or other dishes.
